IDDSI-aligned sourcing workflow

IDDSI normatively classifies drink thickness using the 10 mL syringe Flow Test (gravity, 10 seconds) — not viscometry alone. Our sourcing workflow treats viscosity bands and cold-dispersion checks as R&D screening proxies that must be confirmed by a physical Flow Test before any product is represented as meeting a specific IDDSI level.

  1. Define food-grade specs. Pre-gelatinized starch base (e.g. E1442), cold-water solubility, mesh band, moisture ceiling, and target viscosity tiers at declared dose (g per 200 mL).
  2. Track-A starch gate. Incoming starch must disperse in cold water without fish-eyes or a needs-cooking failure — wrong starch track is re-sourced, not blended around.
  3. R&D lab gates. Cold dispersion, viscosity at declared shear/temperature, 15-minute stability drift, and alpha-amylase challenge (viscosity loss ceiling) — each recorded as structured measurements, not pass/fail guesses when docs are missing.
  4. IDDSI Flow Test confirmation. For any level claim, run the official 10 mL syringe Flow Test at the target dose. Viscosity bands (e.g. 150–300 mPa·s proxy for Level 2) are screening aids only until the Flow Test result is on file.
  5. Document-backed supplier shortlist. Suppliers missing required food-production licences, COAs, or type-inspection reports receive a needs_documents verdict — never a fabricated pass.

R&D viscosity tiers (screening proxies)

These tiers mirror our internal R&D preset bands. They are not substitutes for the IDDSI Flow Test.

Level 2 proxy — Mildly Thick

7.6 g / 200 mL · screening band 150–300 mPa·s (3# rotor, 10 rpm, 20 °C). Confirm with Flow Test: 4–8 mL remaining.

Level 3 proxy — Liquidised Thick

11.4 g / 200 mL · screening band 600–1,200 mPa·s. Confirm with Flow Test: 8–10 mL remaining.

Level 4 proxy — Extremely Thick

13.3 g / 200 mL · screening band ≥1,800 mPa·s. Confirm with Fork Drip and Spoon Tilt tests — Level 4 does not flow through the syringe test.

Supplier document requirements

Before any volume order, each supplier must provide sample material plus the documents below. Missing items surface as needs_documents — buyers can request uploads; Asaptic does not invent compliance data.
